Learn this Atlantis Culinary Month from Nobu Dubai's head chef Damien Duviau, how to make Salmon New Style at home.

Step 1: Prepare the salmon
• Slice the salmon thinly (around 10g each slice)
• Arrange 7 slices on a plate

Step 2: Prepare the topping
• Make a garlic puree using a blender with 20g of olive oil and the garlic
• Make a very thin julienne with ginger, chives, daikon

Step 3: Prepare the sauces
• Mix the yuzu juice with the soya sauce
• Mix the 50g of olive oil with the sesame oil

Step 4: Plating
• Arrange 7 slices of salmon in a plate
• Topped each slice with the topping of ginger and chive
• Add some of the yuzu and soy mix
• Sprinkle sesame seeds
• Heat olive and sesame oil until smoking hot
• Pour hot oil on top of each slice to sear
• Garnish with daikon and frozen cherry tomato

Ingredients for 4 portions:
• 280gr Fresh salmon fillet

Toppings:
• 25gr Ginger
• 5gr Garlic
• 15gr Chives
• 10gr Sesame seed
• 15gr Daikon
• 1 frozen Cherry tomato

Sauces:
• 70 gr Olive oil
• 10 gr Sesame oil
• 15gr Yuzu juice
• 65gr Soya sauce
